How difficult it is to introduce new foods to the kids! And when it comes to vegetables, most of the time it becomes a problem.
I would like to present you today a recipe with red cabbage; this variety of cabbage has many propertiesnutritional, for eye, hearing and skin health, it is rich in calcium, folic acid and vitamin C. And, if this weren't enough, it helps reduce cold symptoms and prevents constipation.
I have put a little imagination into it and made a funny troll face so that the dish enters their eyes, and they find it so fun to eat it that in the end they forget that it is a vegetable. I have called it "The troll eats cabbage."
That said, I encourage you to make them this recipe to let them know the winter cabbage.
- Half red cabbage.
- 3 garlic cloves.
- 2 Fuji apples.
- A handful of currants.
- One teaspoon of paprika.
- 150 gr of smoked bacon.
- 4 prunes, dried apricots, and walnuts.
- Olive oil.
- Apple vinager.
- A splash of sweet wine.
1- We wash the red cabbage and cut it into thin strips, put it in the speed pot to boil for 10 minutes.
2- Peel and slice the apples into thin slices, the garlic, and slice the bacon very often. We put the raisins, plums and dried apricots in hot water to hydrate them.
The walnuts, if they have skin, can be cooked for a few minutes, when they warm, it will be very easy to peel them, later we will chop them.
Next, in a frying pan we add olive oil and brown the garlic, then add the paprika, then add the bacon, let it cook, and it will be time to add the cooked red cabbage, mix well with a splash of apple cider vinegar for 5 minutes.
3- Finally, we add the apple, walnuts, raisins, plums and dried apricots. With a wooden spoon we mix everything. Add a splash of sweet wine, and leave for ten minutes at a low temperature until the alcohol evaporates, the apple is well done and is not hard.
5- It is time to plate. For the little ones to be encouraged to try new flavors and recipes, presentation is very important, I like to create fun shapes and in this dish I came up with creating "The Troll eats cabbage" is very simple, with plums, dried apricots, walnuts and strips of raw red cabbage, as I show in the image.
