Salvitxada sauce is typical of an area of Catalonia (Spain), specifically from the Tarragona area. It is the sauce that is used to accompany the famous calçots (some typical asparagus from Catalonia). Its flavor is similar to that of romesco sauce.

- Garlic
- Tomatoes (four medium or three large)
- Olive oil
- 150 gr of almonds or hazelnuts
- Toasted bread
- Salt
- A Señora or chorizo pepper
1. The first thing to do is to talk about the chorizo pepper. To do this, leave it in water overnight.
2. Blanch the tomatoes and garlic (about three cloves of garlic) in the oven for 30 to 40 minutes. To do this, cut the top of the tomato and make cross-shaped cuts on the bottom.
3. Put the pulp of the Señora in a mortar (it is sweeter than that of the chorizo pepper, but it can also be done with the latter).
4. Add the bread and the almonds or hazelnuts to the mortar and crush well. The bread can be fried or toasted.
5. Remove the skin from the tomato and garlic and add them to the mortar. Blend well, this time with the mixer.
6. While grinding everything, add a little salt and olive oil to your liking.
7. If you want, you can optionally add a little parsley.
